HEAD Meal : Breakfast Pita

Good evening, everyone! Happy Tuesday! I hope the week is going well. Looks like this month is going to fly by, too. Take in the blessings and mercies each day. God is so good to us and I’m thankful for all he is doing.

Are you looking for amazing breakfast that you can eat on your commute to work? I have something for you. I call it the Breakfast Pita.

Here’s what you need.

2 oz of sausage
1/2 cup of frozen spinach
1/2 cup of frozen onions and peppers
1 egg
1 slice of cheddar cheese
1 pita pocket

Start with cooking the sausage over medium heat. Break up the sausage as it browns, for 2-3 minutes. Add the spinach and sausage and peppers. Season with salt, pepper, and any other seasonings you wish. I used Italian seasoning and a touch of garlic. When the veggies are cooked through, about 3 minutes, crack the egg over top of it and mix it in. When the egg has set, 2 minutes, add the cheese. Once it’s melted, stuff the mixture into the pita pocket.

And there you have it.This is an amazing mix of protein, veggies, and starches, with lots of Vitamin C, iron, and calcium to get your metabolism in motion. This dish is savory and juicy, and can easily be eaten during your morning commute. It’s easily customizable, too. Use turkey sausage instead of pork. Switch out the spinach for kale. Mix it up with Swiss or mozzarella. Plus at less than $2 per serving, your wallet will thank you.
